Course Canard Kyoto Kameoka "Nanaya Kamo" [Until August 31, 2026

In celebration of SLH membership, we are offering a special price with the cooperation of our producers.

Beautiful passion in a dish.
Nanaya duck, a specialty of French restaurant Le Chene.
The Nanaya Duck, raised in the nature of Kameoka, Kyoto, is a rare duck that is only delivered to a limited number of restaurants.
Le Chêne uses Croisée, a cross between duck and chervillet,
The flavor is maximized by aging the meat for approximately two weeks and by carefully cooking each part of the meat.

Breast meat is moist. The thigh is tenderized slowly.
The whole bird is served in a dish with the aroma of straw and the broth made from the bones and guts of the bird.

Commitment to Nanaya Duck

    With this in mind, "Nanaya Duck" is raised in Kameoka, a place rich in nature along the banks of the Nanaya River.
    The meat is muscular and rich in flavor, and requires aging and delicate cooking, which requires the skill of the chef.

    By cooking the meat slowly at low temperatures while it is still in chunks, it is both juicy and moist.
    The breast meat is gently heated on the bone, grilled to perfection, and covered with the aroma of straw.
    The thighs are confit at low temperature for 10 hours.
    The whole bird is then sublimated into a dish with a sauce made from the bones and guts of the bird.

    This is a dish in which the pride of the craftsman resides in every move he makes to bring out the "deliciousness".
