The two chefs are particular about their cuisine, placing emphasis on the selection of ingredients, going to the production sites themselves every morning,
Hisao Nakahigashi, owner of the famous Japanese restaurant Kusoku Nakahigashi, and Kazuki Hashimoto, chef of Chorakukan LE CHENE.
It all started with an encounter in the village of Ohara, Kyoto.
He visits the production areas on his own, talks with producers, and purchases ingredients in order to receive the producer's "feelings" reflected in the ingredients and put them on his plate.
Itadakimasu" means nothing less than respect and gratitude for the life of the ingredients themselves and the producers who nurtured them.
